ROCKWELL ICE CREAM CO.
Kevin discovered Rockwell Ice Cream Co. a few weeks ago on Instagram (@rockwellicecream). Since then we have gone there three or four times, and it's our new favorite spot. They have a great variety of ice cream flavors, sundaes, cones, and baked items. My personal favorite is Vanilla Bean. Their sundaes are amazing and Kevin's favorite is the Churro ice cream sandwich. Sadly, there isn't a demand for churros and they aren't made every day. The owner, Justin Williams made a special batch just for Kevin. Seriously you guys request the churros and head over to Rockwell's if you haven't already!!!

SALMON EN PAPILLOTE
It's round two for salmon en papillote. I first made this recipe over a year ago and it has now become a favorite. Let me remind you it’s quick, easy, and oh so delicious. I also love that it’s so versatile. I used zucchini, but you can add other veggies like asparagus, carrots, or dill. It’s one whole meal in a cute little pouch. Serve with a side of rice for an extra hearty meal.

LAMB CHOPS WITH SALSA MACHA
I made lamb chops for the very first time today! I tried making it with a salsa macha, but I couldn't find the right chiles to do it and I added tomatoes to it. The recipe didn't call for it, but I improvised. The original recipe can be found on Rick Bayless' website here. I learned I don't really like lamb, but Kevin loved it. So it was a success after all.

TAQUERIA 27
We went to Salt Lake today to get my ring cleaned and went to Taqueria 27. They just opened their second location on 200 South next to Bar-X and Beer Bar.
Kevin and I were pretty ambitious and tried four different tacos. The first was the taco special of the day. Sorry I can't remember what it included exactly, but it was carne asada with roasted peppers, avocado cream sauce and other amazing ingredients. We also got the citrus carnitas, achiote grilled chicken, and turkey chorizo. We're not Mexican, but thought they were amazing.

EN PAPILLOTE



Last week I decided to make salmon and ended up making salmon en papillote. It was crazy quick and easy to make. Cooking en papillote is a form of french cooking and essentially means cooking in paper or parchment. At first I was scared it would all fall out, it was ridiculously easy.
I got this easy recipe from Everyday Food and they also have a video that was super helpful when it came folding it was pretty darn good with some rice. The last picture is from Everyday Food. Doesn't it just look so tasty?!

Salmon en Papillote
- 1 small zucchini, halved lengthwise and thinly sliced
- 1 shallot, thinly sliced
- 1 tablespoon butter, cut into pieces
- 1/4 teaspoon dried dill weed
- 1 lemon slice, halved, plus 2 teaspoons fresh lemon juice
- 1 skinless salmon fillet (6 to 8 ounces)
- coarse salt and pepper
STEP 1

Preheat oven to 350 degrees. Fold a large piece of parchment paper (about 15 by 16 inches) in half to crease it; open, and lay it flat.
STEP 2
On one side of crease, mound zucchini; top with shallot, butter, dill, and lemon slices. Season with salt and pepper. Placesalmon on top; drizzle with lemon juice, and season with salt and pepper.STEP 3
To close, fold parchment over salmon; make small overlapping pleats to seal the open sides and create a half-moon-shaped packet. Place on a rimmed baking sheet; bake until salmon is opaque throughout, 15 to 17 minutes. Serve.

PUPUSAS

Hey everyone!! I hope you're weekend was great. I am so excited to share what I made for dinner today! I made PUPUSAS! You seriously need try them if you haven't already. They're an amazing Salvadorian dish. You can go to a local Salvadorian restaurant, try their pupusas and them imagine them fifty times better when they're made at home.

THIS WEEK SO FAR






These aren't in any particular order. This week hasn't been too busy just a lot of studying. I got a haircut and now have a long bob. I haven't had my hair this short in over two years. It felt good to get rid of dead ends and start fresh. I hope your week so far has been great!

SNAPGUIDE
I got this several moths ago, finally used it. It's a great way to find simple guides. One of my favorite features is that you can create guides. One Saturday Kevin went to bed around 5 or 6 (I know)! What started as a power nap, turned to a deep slumber for him. I couldn't sleep so I made a smoothie because I was hungry and budin with all the extra bread we had.
It has a tool where it'll create a separate supplies/ingredients list you can view. You can add steps in text, photo, or video. You can view my profile here. and feel free to check out the other guides there as well.

LA CEVECHERIA ON PICO

La Cevecheria on Pico Boulevard in Los Angeles was amazing. Kevin's aunt knows the owner and invited us to lunch. My parents grew up in a port town and they have always loved seafood. I ate it a lot more when I was younger and didn't always enjoy the octopus or calamari. I've probably only had seafood a couple times a year.
Kevin ordered the the Concha Negra. I'll admit the darker name and the fact it was ceviche didn't necessarily attract my attention. I have never been a fan of ceviche anyway but this was delicious.The Mariscada was hearty, it had some spice and warmth that I really needed that day. Our dessert was a slice of tres leches cake. I would say it's like a yellow or white cake that is prepared with a mixture of regular milk, condensed, and evaporated milk. When I make it I'll poke holes in the cake and pour over the tres leches. The longer it sits the more the cake soaks up. It's not mushy, or messy, just heavenly.
I'm no connoisseur, but I found a great review for the place that does La Cevicheria justice. You can find it here.

IF YOU'RE IN TOWN
Kevin and I have eaten out a lot more since we met. Super bad right? Unfortunately, I can't help it. I've started a small list of some places we love. Most are local places and our favorites. I either don't have recent photos or very good ones to add. I'll add a few as soon as I can.
If you're in the area, here are some places we love.
Joe's Cafe
Joe's cafe it's my favorite for breakfast. It's a small place right off State Street, near the University mall. It's normally busy in the morning but the atmosphere is great. It's a one-man show, he does all the cooking and if it's not too busy he'll introduce himself and take a picture with you. The walls are lined with pictures of everyone who has come in. There's so many I couldn't find our old pictures.
The Awful Waffle
This is one of my favorite places and is located just three blocks from my house! They have frozen yogurt, crepes, and pizza. I've only tried the waffles but that's more than enough for me.

I've never really been a fan of hot dogs, but the "Special Sauce" did it for me. You can choose from a beef or polish dog. It comes off the hot off the grill with criss-cross scores. You then choose your toppings. I don't fancy hot dogs and certainly, don't add much to it. I do the special sauce and jalapeƱos.

Okay, technically it's not a local place but where else can you get some deliciousness like this in, oh I don't know... UTAH? Grab a double-double "Animal Style" or a take a step further with a "3x3".

FRUITS & OATS
I made breakfast for Kevin and me this morning. I thought I'd start a little healthier with some fresh fruits and oatmeal. It only took about five minutes to cook the oatmeal itself. I added milk, a pinch of salt and topped it off with diced strawberries, blackberries and a sprinkle of brown sugar.
I loved it! The creaminess of the oatmeal with the cool berries was perfect. The brown sugar was all I needed, it was sweet enough without overdoing it. It's day one for a healthier diet!
